The winemaking duo, father and son, Sergio and Paolo Bombetti, are located 40 km southeast of Rome. For over 100 years, the family has owned two hectares of vineyards with plots of vines over 40 years old. They also have one hectare of centuries-old olive trees, fruit trees and a vegetable garden for the family's needs. Colle Formica produces its wines without the use of herbicides, pesticides and chemical fertilisers. In the cellar, it is vinified using only indigenous yeasts, without temperature control and with very little sulphur added during fermentation. The phases of the moon are followed for decanting and bottling.
